Re Gan Mian (Hot Dry Noodle; Simplified Chinese: 热干面) is a typical breakfast fare of Wuhan, the capital of Hubei province of China. It is made of hand-pulled, wheat-based noodles over which soy sauce, sesame paste, pickled vegetables, chopped chives and rice vinegar are added. The noodles are mixed with the added ingredients just before consumption. Instructions: Using a large cone-shaped strainer, lower the noodle into a pot of boiling soup, stir to make sure the noodle is heated evenly until it is done(around half a minute); then strain the noodle with a few shakes and serve it in a bowl. Top it with soy sauce, sesame paste, pickled vegetables, chopped chives chilli sauce and rice vinegar to taste.
