Red bean paste, Azuki bean paste, or Anko (zh-cp|c=红豆沙|p=hóngdòushā, Japanese language|Japanese: ?????? romaji:
anko) is an ingredient in Chinese cuisine|Chinese and wagashi|Japanese confectionery prepared by boiling and mashing azuki beans with sugar.

Red bean paste is used in many Chinese sweets, such as:
  • tangyuan

  • zongzi

  • mooncakes


Red bean paste is used in many Japanese sweets, such as:

  • Anmitsu (an and jelly)

  • Anpan

  • Daifuku

  • Dorayaki (azuki bean pancake)

  • Manju

  • Oshiruko or Ozenzai (azuki bean soup)

  • Taiyaki

  • Uiro|Uirō (a traditional Japanese steamed cake)


There are different varieties of
anko
  • koshian which is homogenous and smooth

  • tsubuan which has some (sweet) whole beans still in it

  • shiroan which is made from white kidney beans


The cartoon hero Anpanman is an anthropomorphic bun filled with azuki bean paste.
